Sun Oven Cafe Rio Pork

I decided to get brave today and try something really yummy.  My mom had told me that the easiest recipes to make in a Sun Oven are the same ones you make in a slow-cooker, so naturally, my mind went straight to making Cafe Rio Pork.  I used the Cafe Rio recipes from HERE.  I did get a little nervous about cooking raw meat BUT meat can be safely cooked at or above 180 degrees.  So no need to worry about the safety of your meat (of course, you always want to cook meat to the specified safe internal temperature) as long as your Sun Oven is warmer than that.

I marinated the meat over night and threw it in the Sun Oven in the morning.  One complication of cooking in the Sun Oven is that it can get steamy inside which can decrease your temperature by about 25 degrees.  But if you want, you can put your pot in an oven bag to keep the moisture inside.  After six hours, I pulled it out, shredded the meat, and put it back in to get all delicious and saucy.  It was DELICIOUS.  I think I’m really starting to like this Sun Oven thing!
