I realize that in posting this, I will most likely blow my cover entirely but it is worth sharing for all of your convenience and taste buds! One of my favorite things about food storage is its help with the EVERYDAY emergencies (thank goodness because everyday emergencies happen far more often than earthly calamities). Friday is usually my cleaning day and I can get most of it done while my baby is taking her morning nap but on Friday she decided she only wanted short naps and for me to hold her so we had a great time cleaning the house together ALL day. The clock struck 5:30 and I knew my husband would be home soon and I had no dinner! (Sound familiar to anyone else?) I grabbed two cans of chunked roast beef from Costco and a can of green chilis and was on my way. Canned meat is the best for “quickie” meals.

I use the canned beef for most mexican dishes that call for beef (enchiladas, tacos, etc.). I shred it and let it cook in a mixture of spices.
Sometimes I make a brown gravy, shred the beef and mix it in and have hot open faced roast beef sandwiches. My dad used to make them with leftover roast, but this works just as well.
I have tried substituting it in some other recipes like chili, beef stroganoff, and vegetable beef soup.

Have you ever pressure canned your own meats before?
I have done it and it is fantastic! I pressure canned boneless, chicken breasts in pint jars (each jar holds 1 pound of raw meat) with no additional liquid or seasonings. I tasted better and was more moist that any of the canned chicken on the store shelves and I only payed $1.69 per pound for the meat!
I have also pressure canned ground beef. I found that the beef gets sort of “mushy” canning it, but if I fry the meat to heat up the fats, then the texture of the meat becomes more normal. And then I drain the fat off just as with any ground beef.
I love the idea of adding these items to my food storage and having them available for those last minute meals.

I love Costco canned beef!! We love to mix it with BBQ sauce, heat it up, shred it and then put it on hamburger buns for a SUPER fast meal!! I have two roasts in the crock pot right now. I am going to shred the meat, put it is small freezer bags and freeze for future easy meals!
