So while we are talking about all of the homemade substitutes you can make with food storage, I would be completely remiss if I didn’t mention how to make a homemade buttermilk substitute from powdered milk.  Now, I know that you can purchase buttermilk powder.  Which I have and from the experimenting I did with it, it just wasn’t worth the higher price.  Especially when making a homemade buttermilk substitute is as easy as adding vinegar (which is totally cheap) to your mixed powdered milk.  So why do we use buttermilk in our recipes?  Well it’s an acid and it reacts really well with baking soda which is a base.  Giving you a very tender and light baked good.

HOMEMADE BUTTERMILK SUBSTITUTE

3 T. non-instant milk powder + 1 C. water + 1 T. vinegar (or lemon juice)=1 C. buttermilk

Make sure to let this sit for a few minutes before adding to your recipe.
