Food Storage Meals in Minutes: Cranberry Chicken

Freezer meals are a great addition to your short-term food storage.  Think of your short-term food storage as a rainy day fund you can eat!  It will help you through those personal downs like sickness, job loss, or busy day!  I super love this recipe.  I got it from that same Aunt who gave me the amazing salad dressing recipe.  I’ve discovered that it also makes a GREAT freezer meal–making the prep on this meal just minutes!  Simply combine the ingredients together in a Ziploc bag and put it in your freezer.  The chicken can be frozen or fresh (but don’t thaw the chicken and then re-freeze, that’s a no-no!)  My favorite way to eat this is to serve it over rice (made from my pressure cooker) and with oven roasted potatoes.  Why?  I’m so glad you asked!!  I’ve discovered that I can cook the chicken and potatoes at the same time and they are perfectly done at the same time!  Simply chop potatoes toss with olive oil, rosemary, garlic, and salt and bake on a cookie sheet while the chicken is cooking.  AGAIN SO EASY!  But we do have one problem.  Have you noticed that dry onion soup mix is really expensive?  Yeah, me too.  And this recipe calls for it.  But no fears, you can actually make your own for a fraction of the price!

Homemade Dry Onion Soup Mix

1/4 C. dried onion flakes
2 T. beef bouillon granules (make sure it’s BEEF, and not vegetarian Beef–that would be worthless)
1/4 t. onion powder
1/4 t. parsley flakes
1/8 t. celery seed
1/8 t. paprika
1/8 t. ground black pepper

Mix together and use to replace one packet of Dry Onion Soup Mix
