Food Storage Meals in Minutes: Taco Soup

taco soupThis may sound funny but my daughter just loves Mexican Food.  Her favorite restaurant is Del Taco (which who is complaining that is CHEAP and has a play yard, lol.) If it were up to her, she’d have bean burritos every night.  So you can imagine that she really loves this soup!  I love having those recipes that kids look forward to, but I also love this recipe because you just dump everything in and it’s done in minutes–literally.  Now, I know there are a lot of people into the Recipes in Jars and while I’m not against them, I’m not always for them either.  If you use freeze-dried food (which remember is on average 4x more expensive than canned options) a simple Taco Soup could cost you over NINE BUCKS to make.  El rip-off-o (like my Spanish?)!!!  I was able to make this soup by dumping in my canned goods (liquid and all, no rehydrating necessary) for under $4.  Most of the cost was in the canned ground beef.  (Are you canning your own meat yet?  It’s so easy and you end up paying the price of fresh.  Freeze dried meat costs over $10 a pound….whoops….not something you should be using every day!)  I don’t have a large family, so I usually half the recipe so we aren’t eating it all week.

    To consume 95 % of our food storage. My canned meats that were dated 2 years were still
    Perfect! My secret is to place all my jars into boxes and keep them cool and dark. Once a week I
    Would go into my food storage room and gather the jars I would need for the upcoming week.
