Homemade Graham Crackers

Who knew you could make such amazing graham crackers right at home? Karen from ID sent me a GREAT recipe (it tastes like a mix between graham crackers and Teddy Grahams). It’s easy to make and uses food storage so you know I’d love it! I went ahead and made a how-to video on how to make them so…enjoy!

Graham Crackers-from Karen in Chubbuck, ID
1/3 cup shortening
3/4 cup plus 1 T. sugar (I use brown sugar)
3 T. honey, warmed
1 1/2 tsp. vanilla
1 3/4 cups whole wheat flour
1 1/4 cups all-purpose flour
1 1/4 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup plus 2 T. water
I add in 1-2 t. cinnamon

Preheat oven to 300 degrees. Combine shortening, sugar, honey and vanilla.
Blend until smooth. Combine dry ingredients in a separate bowl, and then
add dry mixture to the wet ingredients and blend well with electric mixer.
Slowly add water to the mixture while beating. You may have to mix by hand
until the mixture forms a large ball of dough.

Divide the dough in thirds and roll one third out on waxed paper till at
least 1/16″ thick. It should be very thin. Use a knife to trim into a
rectangle slightly smaller than the sheet pan you will be using. Grease
the baking pan with a light coating of shortening. Turn the dough over
onto the baking sheet and remove the wax paper.

Use a knife to score the dough into smaller crackers. Use a toothpick (or
fork) to poke holes over the entire surface of the dough. Bake for 22 to
24 minutes, or until the dough begins to turn light brown around the
edges. Turn the baking sheet around halfway through baking time for even
browning. Cool the crackers before breaking them apart along the scored
lines. Repeat process for remaining dough. If desired, you can sprinkle a
cinnamon/sugar mixture over the dough before baking to make cinnamon
grahams.

    Question…
    Is there any way to minimize the amount of screen space the black bars take up? We miss a lot of what you do on the counter–and your head a lot of times. Anyway, just a thought.

  15. Have you ever tried butter instead of shortening? I really try not to use shortening because of the trans fat. Do you know if butter would work?

Like one of the previous posts above I sure do enjoy your videos…it makes it alot easier to understand when you can see it with your own eyes.   19. I have a question. I tried making these today. Is the dough supposed to be sticky almost like cookie dough? I added more flour because it was bad. Also I didnt have any parchment paper so I used the tin foil. I dont know if my dough was too sticky but the tin foil was impossible. However the dough tasted GREAT!!! I can not wait to bake some and have it turn out. Thanks so much!!

  21. I’ve been making graham crackers and wheat thins for my family for a year, and I can never make enough of them! I use oat flour and whole wheat in the grahams though. (No white flour) They are fabulous and filling.

  27. I had to put my rolled out dough (wax paper) in the freezer to get it off the paper. DH and DC LOVED them!

  29. I used butter for mine and they turned out just fine. Like someone else said, my dough was really sticky, but I just kept adding pinches of flour and it was fine. My only problem was that I didn’t roll it out thin enough, but they still tasted great! (Yes, tasted…they are gone. My son took them outside to all the neighborhood kids)

  33. I don’t know if I rolled mine out to thin, but even after spraying the pan with pam they just would not come out. We got graham cracker crumbs instead. But I must say–they are yummy!

  35. There is 0 trans-fat shortening that can be used at this time. It has probably been out at least 2 years. I have seen it at Maceys and Costco.

    My dough was also sticky, but with some patience and coxing I was able to get it off of my wax paper and cookie pan without too much trouble (I used a butter knife to gently pry them away from the pan while they were still warm. Then let them cool on the pan before breaking them up). My husband loves gram crackers but I never think to buy them when I go shopping. Now I can give him a treat whenever he is good! 😉

  39. Thanks so much for this recipe. I rolled mine right onto the back/bottom of a jelly roll pan, just like I learned from your wheat thins recipe. it worked great and was so easy.

    We overcooked one batch by mistake and my six-year-old had a blast turning them into crumbs to use in crusts.

    Thanks also to those who gave hints about using butter instead of Crisco, using all whole wheat and adding more flour to deal with the stick ydough. I love being able to learn from you all.

  43. I know this recipe was posted over a year ago, but I just made them and wanted to let everyone know that you can leave the parchment paper on the bottom when you cook. It is much easier and does not stick to the paper when it cook. Thanks for the recipe!

  44. Have you tried it with beans instead of shortening? When making cookies with beans they are very moist. Would you need to add as much water or cook a bit longer?

    1. I’m not sure that is a good question. I’ll have to experiment with it.

  45. On your cake recipes, which one say your white recipe would you make a spice cake from?  The stories have quit selling spice cake and I want to make my own.
