raspberry syrup

So tonight I was talking to my best friend, the one I’ve known my whole life, and we were having a very serious conversation about favorite ice cream flavors as we ate our ice cream sandwiches.   She said hers was mint chocolate chip and strawberry with mix-ins.  I had to think for awhile about this.  While I truly love chocolate and caramel, I found myself returning to vanilla.  Which was surprising because growing up that is all we had and I really wished we could be a “cool” family that had fun flavors.  But when you think about all you can do to vanilla ice cream-hot fudge (next post), cookies, chocolate chips, and my ultimate favorite FRESH FRUIT.  Which when it is something like raspberries, can be a little hard-especially when your raspberry starts are still that-starts and aren’t baring fruit.  Thankfully there are freeze dried raspberries (which, did I mention, are on sale right now?) for emergencies as this!

I have to say that this is my NEW favorite topping on almost everything and that I’m drooling just writing this post!  It is so easy to make (just blend it all in the blender…and you know how I LOVE my blender), is entirely delicious and tastes FRESH.  In the bleak of the winter it’s nice to have a slight taste of heaven.  Especially, if you’re like me and your all time favorite dessert is vanilla ice cream with fruit (or fruit sauce, as the case may be) you will love having this around!  But remember, it tastes good on so many other items: cheesecake, french toast, trifle, and the list goes on and on!

Raspberry Syrup
(makes about 2 cups)

1 1/2 C. freeze dried raspberries
2 C. water
1/2 C. sugar
1 T. lemon juice

Blend ingredients in blender.  If you want it warm, make sure to transfer it to a microwave safe container and heat until warmed through.

  1. Thank you! This sounds really yummy.:) Can't wait to try this recipe on waffles…just as soon as my order of freeze dried fruit arrives.

  2. that blender sounds pretty cool! What is the recycling/plastic type code on the jar? I looked at the website and all it says is “made from a tough durable material…”. That doesn't help much… except that it's not glass. Boo.

  3. Thank you so much for the recipe. We are totally spoiled in oregon and I have a freezer full of berries from a lot of picking during the summer. How do I convert the measurements in your recipes from the dehydrated to frozen? Thank you so much for all the wonderful information!!!

  4. What is your opinion of dehydrated verses freeze dried fruits and vegetables? Taste, texture? Freeze dried are more pricey, but I don't want to spend money on dehydrated if they don't taste good.

  5. I'll be answering this in a near future post..stay tuned~

  6. Made this a week ago for a birthday party and served it with white cake (no icing) and vanilla ice cream. YUM!!! I love raspberries! It was defitely a hit!
