Corner Street Bakery Chicken Salad Sandwich

Corner Street Bakery gets a food storage makeover! This is my favorite sandwich and it tastes great even with food storage!

  • Prep: 10 mins
  • Yields: 6 sandwiches

Ingredients

2-3 cups diced or shredded cooked chicken (canned works great!)

3 green onions, sliced

1/3 cup chopped dried cranberries

1 large red apple with skin, diced (or 3/4 cup chopped dehydrated apples)

1/3 cup finely minced celery (or 2 Tablespoons dehydrated celery, minced)

1/2 cup sliced or slivered almonds, toasted

Dressing:

1/2 cup mayo

1/2 cup sour cream or greek yogurt

2 TB. lemon juice

2 tsp. brown sugar

1/2 tsp. salt

Sandwich

lettuce

mutli-grain/seed bread

Directions

1Stir together dressing ingredients. Fold in chicken and remaining ingredients.

2Best if refrigerated for several hours or overnight to let flavors come together.
