Strawberry Freezer Jam

This is by far the easiest and most delicious of all the food storage recipes! I like to put this jam on sandwiches, waffles, crepes, ice cream…pretty much I could put this on any food and I think it would taste good. (Okay, maybe not ANY food but A LOT of foods 🙂 My sister-in-law makes this jam all of the time and it is a great way to ease your way into food storage canning and making your own sauces, jams, salsas, etc. Of course I have a how-to video for you to watch. So enjoy, and watch for good sales on berries or use the berries in your garden! ENJOY!

MCP Pectin Freezer Jam

3-1/4 cups prepared fruit (buy about 2 qt. fully ripe strawberries)
1/4 cup fresh lemon juice
1 box MCP Pectin
1 cup corn syrup
4-1/2 cups sugar, measured into separate bowl

Directions:

RINSE clean plastic containers and lids with boiling water. Dry thoroughly.

CRUSH strawberries thoroughly, one layer at a time. Measure exactly 3-1/4 cups crushed strawberries into large bowl. Stir in lemon juice. Stir in pectin; let stand 30 min., stirring every 5 min. Stir in corn syrup. Gradually add sugar, stirring until well blended. Stir an additional 3 min. or until sugar is completely dissolved and no longer grainy. (A few sugar crystals may remain.)

FILL all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in refrigerator before using.

    I thought it was coincidental that you would do freezer jam today, because I made some yesterday having found berries on sale for $.88 a pound as well. Sadly, I did NOT know that you need the right pectin for the right recipe, so I grabbed whatever was handy at the store (they didn’t have MCP at the time). It still tastes good and I am sure it will go quickly.

    Thanks again for the tutorial and I did indeed feel like we made jam together this weekend.

  3. Hi Crystal – we love freezer jam at our house. If you need to make it when strawberries or other fruit is not on sale, we buy frozen fruit at Sam’s club to make the jam. It’s cheaper than regular fruit and the strawberries are ready to go, just thaw! I’ve also made it with frozen raspberries and blueberries (mixed).

  7. Crystal – You made it look sooo easy – I may have to try it if it ever gets warm enough to go pick berries.
    Very brave & smart to wear a white t-shirt with apron – to make anything with strawberries…
    I always wear something dark when processing lots of staining foods – I’m a bit messy

  11. I’ve done jam lots of times and LOVE it! You can find certain pectins that are either a less sugar or a sugar free recipie. Just look at the options on in the store. but like Crystal says use the recipie that comes with the box. There will be a little flyer in the box that has recipies for many cooked jams, jellies and freezer jams. I found a place where I can buy pectin in bulk-it ends up being about half as much as the MCP. In order to get the right amount of pectin I bought I box of MCP and actually measured how much pectin they use and then I used that same amount of the bulk pectin! I worked great! I haven’t been able to tell a difference! Have fun making jam!

  15. you can use xagave instead of sugar and thta taste very good too, and it’s healthier give it a try you use half of the sugar in the recipe if using xagave go to the web page for it to learn more just put xagave.com .

  17. I made jam yesterday! It was so exciting to try this recipe. I used a Splenda/sugar blend you can find in the store (and you only use half the required amount). It turned out sooooo good! Thanks, Crystal!

    Sometimes if I am doing a big batch of jam and don’t want billions of containers in my freezer I will take the recipe as far as combining the 31/4 C fruit with the 1/4 C lemon juice. I mix those well and then put it into a quart canning jar. I put the lid and ring on and then freeze it in my freezer. That way I have one container in my freezer instead of 4. My aunt taught me that. When I want to make up a batch, I just pull it out of the freezer, let it thaw, and continue with the above recipe. (You just have to make sure to leave about and inch – give or take – at the top of the jar for the jam to expand a little when it freezes.) It always turns out great.

  25. Wow, that’s a lot of sugar. I recommend using Ball Freezer Jam Pectin. It only calls for 1 1/2 cups of sugar. I hate corn syrup and avoid it at all cost. I love Ball and highly recommend it. It’s super easy. Way easier recipe then the one posted here.

    me in Canoga Park, CA We have lots of berries in
    our back yard and I love using MCP when I make jam.
