Sun Oven Turkey Divan

So you know all about that extra meat I got after roasting my turkey, I decided to turn it into my husband’s favorite casserole.  Chicken, or in this case, Turkey Divan.  His mom makes an awesome Chicken Divan.

It also posed a very interesting Sun Oven problem.  Like a lot of casseroles topped with cheese, it calls to be covered with foil in the oven.  However, if you cover a casserole with foil in the Sun Oven you have a big problem because the  foil reflects the heat out of the oven.  So what do you do?  Well, first we need to understand what the foil’s purpose is: 1) to keep the moisture in and 2) to keep the cheese from getting over cooked.  So how do we solve this when we’re solar cooking?  It’s quite easy, cook the casserole in something with a lid…like your Pyrex casserole dishes.  They aren’t dark which is optimal when solar cooking but it will still work.  I actually used dishes that were all glass.  I know they sell pots with the Sun Oven now with a glass lid, which is helpful with something like a casserole because you have a better visual of when it is heated through.  Anyway, it was really delicious and my husband actually liked the turkey better than the chicken.  Oh man, I’m really loving this Sun Oven!
