A Tasty Look at Berry Cobbler

We’re all familiar with these fun and easy Tasty videos that circulate on Facebook.  I know I love them, I’m sure by now you have realized that I really love food.  Many times when I see these videos, the food storage possibilities are scream out to me.  Case and point: this delicious looking berry cobbler.  I was able to make this entirely from food storage and it was FABULOUS.  Like I licked my bowl clean–FABULOUS.

I didn’t use all blueberries because I’m not an all-blueberry-kind-of-gal but I did use a nice assortment of freeze-dried berries.  I LOVE freeze-dried berries!  Many times they are cheaper than what you can purchase them for in the store (Especially raspberries and blueberries.  Strawberries you can catch on sale in the Summer but during the long hard Winter months, it’s nice to have strawberries around.)  I was very excited to find a use for my freeze-dried blackberries.  Eaten plain and dry, they are gross–almost bitter and full of seeds.  However, mixed with the raspberries in this recipe they tasted like boysenberries and they are GOOD!

I used my recipe for sourdough biscuits instead of the refrigerator biscuits and food storage ice cream for the delicious vanilla ice cream on top.

And as an added bonus I was able to cook it in the Sun Oven!  If you’ve ever wondered which recipes will work well in a Sun Oven, start with slow cooker recipes.  They work well and are a great place to start!

Easy Berry Cobbler

This recipe is perfect and so delicious! A perfect dish for those hot Summer days, especially if you have a Sun Oven to cook it in!

  • Prep: 10 mins
  • Cook: 2 hrs 50 mins
  • Yields: 6-8 servings

Ingredients

1 can pre-made biscuits (or one recipe of sourdough biscuits)

6 cups blueberries (6 cups freeze-dried berries + 3 cups of water, I used 1 cup blueberries, 2.5 cups blackberries and 2.5 cups raspberries)

1/2 brown sugar (1/2 cup white sugar + 1/2 tablespoon molasses)

1 tablespoon cinnamon

2 tablespoons cornstarch

Directions

1In a large bowl add your blueberries, brown sugar, cinnamon and cornstarch and mix it together throughly. If you're using freeze-dried berries, add the water in now.)

2Quarter your pre-made biscuits and set aside.

3In a slow cooker pour your blueberry mix and top evenly with your quartered biscuits.

4Cook on high for two and half to three hours and serve a la mode with vanilla ice cream or your favorite whipped cream!

5You can also cook this is a pre-heated Sun Oven. Simply place it in your Sun Oven and allow to cook for 2.5-3 hours. Or in your regular oven (350) for 20 minutes.
