Okay, are you all enjoying the Olympics?!  I haven’t watched this much tv in..well…two years since Vancouver.  It is so inspiring to see such greatness.  Alright, enough of my emotional love for the Olympics and only to my olympic zucchinis!  They are going gang busters and I hardly know what to do with myself!  Then I remembered all of these wonderful recipes…

(A wonderfully easy and delicious dinner!)

Okay, so now that I’m drooling over these recipes, I guess it’s time to get out to the garden and pick some more zucchinis (yeah, because I’m the only one crazy enough to have planted THREE zucchini plants this summer)

  3. I was short on yellow squash and wanted to make your Mac-n-Cheese. The one with yellow squash puree…I used purreed zuch and yellow squash – turned out just fine. I added extra sharp cheddar for half the cheese too….

  5. I started putting zucchini in my smoothies last week. My favorite combination so far is spinach, zucchini, banana, strawberry, and blueberry with a water or orange juice base. The banana covers the taste of the spinach and zucchini (one banana is enough if it’s pretty ripe, if it’s less ripe you probably need 2) and enough berries will cover the green if the color bothers you (blueberries are a better color mask than strawberries). I cut the zucchini into big chunks and froze it. If enough of what you are putting in is frozen you don’t even need any ice. My kids LOVE these and we have been having a smoothie and a slice of whole wheat bread for lunch almost every day. There’s nothing “food storage” about it but it’s a great way to use up our abundance of zucchini and get our 5-a-day.

  19. Crystal – I had a year where I planted 8 zucchini plants and got 1 squash from 6 of the plants. The following year I thought I was planting zucchs and was given yellow squash – they were coming out of our ears….

  23. This Spaghetti recipes makes me wish my zucchini was still going, but the came most of May and June and are now done. I might have to buy some to try it. I can tell you that your yellow squash cupcakes and mac and cheese with squash hidden inside were big winners at our house.

  26. cindy- I live in the midwest where we grow more bugs then vegetables, and so much moisture that disease abounds . So I plant summer squash several times (about 3 or4 weeks apart,) and maybe in a different location so it takes a while for the bugs to find it.

  33. Thanks for the recipes, I have some volunteer zucchini plants producing now; my ‘real’ garden was planted only about a month ago. My favorite way to preserve zucchini now is to puree and freeze it. The puree works great in breads, cakes, muffins, waffles; whatever I’ve tried. The problem with shredding and freezing is that when thawed it becomes green fiber with lots of zucchini water. See what you think!

My favorite way to preserve zucchini now is to puree and freeze it. The puree works great in breads, cakes, muffins, waffles; whatever I’ve tried.
