CHICKEN SALAD

I really, really love Corner Street Bakery’s Chicken Salad sandwich.  It reminds me of when I worked in the marketing department of a boutique real estate firm (back when the title agencies were allowed to bring in lunches and throw fun parties).  There was a title agency that always brought in Corner Street Bakery for lunch and this was my favorite sandwich.  Forget what you thought you knew about chicken salad sandwiches because this will be a game changer for you.  It is so good (like so, so, so good) and very easy to make.  It is perfect for any family gathering, luncheon, or shower you may be in charge of.  Plus, it can almost entirely be made from food storage…and STILL taste good!  Now, let’s go over a few food storage items:

Canned chicken: Makes any recipe like a chicken salad very easy!  Simply drain off broth (go ahead and save that for another recipe that calls for chicken broth) and add it to your recipe.  I don’t mess with freeze-dried chicken because it equates to $15 a pound.  (You read that correctly, FIFTEEN DOLLARS A POUND)  It better be coated in gold for that price.  The cheapest way to go is to can your own chicken (we love getting chicken from Zaycon–a farm fresh company where you save by buying in bulk) You can sign up for Zaycon notifications in your neck of the woods HERE. (Currently they have chicken breasts for $1.89 a pound).  Even if you don’t want to can your own, picking up a six pack at Costco is around $4-5 a pound.

Dehydrated Celery: I have to admit something: I don’t like celery.  Don’t get me wrong, slathered with peanut butter and dotted with raisins, it’s great but it just isn’t something I buy a lot and definitely don’t need a honking chunk of celery when most recipes only call for a tiny amount of celery.  (Probably because there are more people like me than the celery market leads on, lol.) That is where dehydrated celery comes in like a champ!  It’s already chopped, and I don’t need to feel guilty when I only use a handful.

Dehydrated Apple Slices: Yes, I know they have freeze-dried apples but I really like the dehydrated variety.  Why?  Because they have FLAVOR!  Dehydrated fruits and vegetables are awesome because all of that flavor is condensed and awesome.  I find the freeze-dried variety to be bland and the consistency of styrofoam.  (Ha ha…even Michelle from Good Things Utah agrees!  Click HERE to see what I mean)  Plus, from the LDS Church Cannery they are CHEAP. So cheap, in fact, that a one-year supply of dehydrated apples costs under $60 shipped straight to your door (you can order them HERE).  Many an Apple Betty’s I have made with these puppies and I love them!

Corner Street Bakery Chicken Salad Sandwich

Corner Street Bakery gets a food storage makeover! This is my favorite sandwich and it tastes great even with food storage!

  • Prep: 10 mins
  • Yields: 6 sandwiches

Ingredients

2-3 cups diced or shredded cooked chicken (canned works great!)

3 green onions, sliced

1/3 cup chopped dried cranberries

1 large red apple with skin, diced (or 3/4 cup chopped dehydrated apples)

1/3 cup finely minced celery (or 2 Tablespoons dehydrated celery, minced)

1/2 cup sliced or slivered almonds, toasted

Dressing:

1/2 cup mayo

1/2 cup sour cream or greek yogurt

2 TB. lemon juice

2 tsp. brown sugar

1/2 tsp. salt

Sandwich

lettuce

mutli-grain/seed bread

Directions

1Stir together dressing ingredients. Fold in chicken and remaining ingredients.

2Best if refrigerated for several hours or overnight to let flavors come together.
