Lemon Pepper Chicken Saute

I’ve been making this recipe since college and was excited that it used rice for the food storage…until I figured out how to make it using MAGIC MIX!  Now it’s even easier to make (which in and of itself is shocking) and SUPER delicious!

Lemon Pepper Chicken Saute

4 chicken breasts
2 T. butter
1 c. baby carrots, quartered length wise
1/3 c. sliced green onions
1 c. chicken broth (I made mine from bouillon…so much cheaper)
1/2 c. MAGIC MIX
2 t. lemon pepper
1/4 c. sour cream or cream cheese
1 t. parsley flakes

In large skillet, melt butter over medium heat.  Saute chicken 7-10 minutes per side or until done; remove from skillet.  Keep warm.

Add carrots and onions to skillet.  Saute 2 minutes.  Pour in chicken broth, lemon pepper, MAGIC MIX (remember you can add MAGIC MIX directly to a hot liquid with OUT it clumping!) Stir with wire whisk until thickened.  Simmer 2 minutes.  Add sour cream/cream cheese and parsley.  Simmer 2 minutes.  Spoon over chicken and serve over rice.

  9. So – we just used this as our base for dinner – we had to make a few adaptations, since I didn’t want to go to the grocery store. Instead of using whole chicken breasts, I made the sauce as directed with the carrots and onions, and when I stirred in the sour cream, I stirred in a 12(?)-ounce can of Costco chicken breast, some green peas (my kids eat things with green peas in them) and some small cooked pasta – it was a tasty pasta dish.

    I think this sauce would be great with many different seasoning blends – I was out of lemon pepper, but had a pasta seasoning blend that was excellent (it did have lemon and pepper as part of its ingredients).

  17. To the above comment, I actually think magic mix is healthier (and tastier and cheaper) than creamed soup but that’s just me.

  19. I actually get my canned soup for 29 cents which is cheaper than the butter in magic mix, and I think the fat content would be less (about 5 grams per can). Just a thought . . . maybe I’m wrong . . . I just don’t like to use a lot of butter in my meals.

So I put the magic mix recipe into a recipe nutrion calculator and found out that the store bought soup would be lower in fat by about 3-5g per recipe and about about 35 calories per recipe. For me I like the magic mix because I know exactly what I am putting in my food as well as sodium content. If you make your own broth or buy a low sodium boullion powder as well as a low or no salt margarine you can reduce your sodium alot. Then I put it back in with sea salt. I already have tried replacing the dry milk with soy protien powder and it worked really well for the two recipes I tried it with. I’m going to play around with the mix and see if I can find a lower fat option. On it’s own the magic mix is not to bad for fat in a recipe until you add cheese or sour cream or are sauting your veggies in additional fats. Then fat content can get up there.
