My whole life I’ve wanted to make a yummy, fresh tasting Raspberry Vinaigrette. They are so delicious in the summer when raspberries are at the peak. Well now, with a little food storage magic, you can have it year round!

My favorite use (and I think the most impressive) is on this salad which is just greens (spinach or mesclun mix), strawberries, blueberries, Craisins, mangoes (or diced canned peaches…come on, all the mango salsas do it and so can you!), nuts and feta.

I may or may not have a little love affair with Thousand Island Dressing. It probably helps that it is also one of my favorite parts about an In-n-Out burger (Animal Style, of course!) and a Reuben sandwich.
