Well if you’ve ever wanted to know how to sneak vegetables in food with out anyone detecting…this is the post for you! I’ve tackled one of the hardest garden vegetables to find recipes for, Yellow Summer Squash. First we’re going to puree it and then put it in Macaroni and Cheese. My next post will be about an AWESOME Twinkie cupcake using the yellow summer squash puree. So…let’s learn how to do the puree, and for those of you with babies at home, make sure you check out the entire video. I’ve got some great tips on making your own food storage easily (you know I like easy!) and quickly. It will not only save you a ton of money but give your baby better nutrition.
I love trying things in Macaroni and Cheese because I don’t know ONE kid that doesn’t like good old mac ‘n cheese. It is so easy to have children try it and this is no exception! Not only are we going to use magic mix (if you need a crash course on it, click on my video page to watch a video on how to make magic mix and a white sauce from magic mix), elbow noodles from your food storage, but we’ll add in some vegetables as well. The best part is…no one will ever guess! It is delicious, creamy, and bound to please the pickiest eaters! Hopefully, this will eliminate some fights you may be having at the dinner table!
Yellow Squash Puree Macaroni and Cheese
2 C. Elbow Macaroni
1/3 C. Magic Mix
1/2 C. Water
1 C. Yellow Squash Puree
1-1/2 C. Cheddar Cheese, grated
4 oz. Cream Cheese (can be reduced fat or non-fat)
1/2 t. Salt
1/8 t. Paprika
1/2 t. Pepper
Directions:
1. Bring a large pot of salted water to a boil, add the macaroni and cook accodring to package directions until al dente. Drain in a colander.
2. While the macaroni is cooking, combine Magic Mix and water in a saucepan. Stir rapidly (I use a wire wisk) over medium heat until it starts to bubble and thicken.
3. Add the squash puree, Cheddar, cream cheese, and seasonings, and stir until the cheese is melted and the sauce is smooth.
4. Stir in the macaroni and serve warm. (Personally, I chop up a tomato and stir it in. I really like the taste of tomatoes and cheese but that is optional. I also garnish with a little paprika and grated cheese.
Try it! Your kids will love it…which means you will too!

I love yellow squash so thanks for this recipe! I definitely want to try it. Although, I must say, I have found one kid who doesn’t like good old mac and cheese…myy own daughter! She refuses to eat the stuff. Maybe she’ll like it with squash in it. 🙂

The frozen cubes are the baby food. I either get them out a day before hand and let them unthaw in the fridge or I re-heat them in the microwave for 30 seconds per cube. Let me know if you have any other questions!

Crystal- I have everything ready to try this recipe (just finished steaming my squash), except for cream cheese. Have you ever done this recipe without cream cheese? Do you think it would work?

Ok, I just made this for dinner and it was awesome! This was the best mac and cheese I’ve ever had. I love yellow squash so I wouldn’t mind tasting it in the dish, but I couldn’t taste it at all. It was definitely well hidden in there. This is going to be a frequent dish around here.

I haven’t tried it with out the cream cheese. You could maybe try it with sour cream but I don’t know for sure how it would taste. Sorry! I hope your family enjoys it…I’m already craving to have it again! I love it!

My oldest son (7) doesn’t like mac and cheese. Go figure. He doesn’t like any pasta really. But I made this tonight and he did try it, so that was good. But my other kids gobbled it up…seconds and thirds! I loved it too, and it will be a favorite here now. The squash was well hidden, you couldn’t even taste it! Thanks for the recipe.

Move over Jessica Sienfeld, here comes Crystal! I made this a couple of nights ago and really liked it; next time I will add some ham or peas (or tomatoes, as you suggest). It is very similar to Jessica Sienfeld’s recipe. She also has one that uses white beans, increasing the protien, but I haven’t tried it. I absolutely love your blog!! We made chocolate pudding pops tonight, so after they freeze I’ll have to let you know how they turned out. (And even if we don’t like them it was worth the fun my daughter had making them!) Thanks for all your great ideas!
