This is my go-to birthday chocolate cake. It's so decadently chocolate, chewy, fudgy, melt-in-your-mouth...do I need to continue? ;) It's hands down, the BEST homemade chocolate cake recipe out there.
Prep: 15 mins
Cook: 30 mins
Yields: 1 cake

• 2 cups sugar
• 1 3/4 cup flour (I use whole wheat flour)
• 3/4 cup cocoa or dark cocoa
• 1 1/2 tsp. baking powder
• 1 1/2 tsp. baking soda
• 1 tsp. salt
• 2 eggs (1/4 cup dry egg powder + 1/2 cup water)

• 1/2 cup oil (or bean puree)
• 2 tsp. vanilla
• 1 cup boiling water
GANACHE TOPPING
12 oz. chocolate chips
12 oz. cream
Directions
1Heat oven to 375. Spray 9-inch round pans, 13×9 or bundt baking pan.
2Beat all ingredients except boiling water on medium speed of electric mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3Bake 30-35 minutes for round pans, 35-40 minutes for 9×13 pan or 50-55 minutes for bundt pan or until toothpick inserted in center comes out clean. Cool 10 minutes and remove from pans to wire racks.
4GANACHE TOPPING
5Pour your chocolate chips into a microwave safe bowl. Add cream on top of chocolate chips. Microwave for one minute. Remove and allow to cool for 5 minutes (no stirring, I mean it!). Then stir the cream and chocolate to combine.
