I received this recipe from one of my readers and it has since become one of my favorite recipes. It's great in milk, topping yogurt, mixed in with brownies, or simply eating it plain.

Ingredients
1 1/2 cup sugar
1 1/3 cup butter
1/2 tsp. vanilla extract
2/3 cup peanut butter
1/2 tsp. salt
1 cup water
12 cups rolled oats
1 tsp. cinnamon
Directions
1Mix sugar, butter, vanilla, peanut butter, salt and water in a 4-cup glass jug or measuring cup and heat for 4 minutes in your microwave on high.
2Mix oats and cinnamon in a large bowl. Pour peanut butter mixture over quickly and mix well.
3Put onto two small greased cookie sheets.
4Bake at 325 degrees for 25 minutes.
5Exchange cookie sheets in oven, cook an additional 10 minutes.
6Turn oven off and let granola dry for several hours.
7Store in closed jar on kitchen counter and watch it disappear. ;)
