I saw a recipe for making homemade chicken nuggets (with out all of the other ingredients) on my friends website (Super Healthy Kids-it’s an awesome site if you haven’t seen it yet) But I figured I could do this with food storage and skip a step.
Instead of cooking my own chicken breast, I just used canned chicken instead. Which was really helpful because I was in a hurry to get my kids fed before the babysitter showed up. I will say this, do not use powdered eggs in something like this. Powdered eggs work really great in baked goods but not as a binding agent for meats. So no meatloaf, meatballs, or these chicken nuggets. You’ll want to use fresh eggs-it’s just the cold, ugly practical truth.
