Buttermilk Biscuits

Have you ever wondered how to get flaky, tender buttermilk biscuits the easy way? Biscuits don't need to be complicated, especially when you use everyday kitchen items to do the tricky work for you. Plus, I included how you can make your own buttermilk substitute from powdered milk, because who keeps buttermilk on hand all of the time?!

Ingredients

2 cups flour (1 cup all-purpose and 1 cup whole wheat works well!)

4 tsp. baking powder

1/2 tsp. salt

1/2 tsp. cream of tartar

2 tsp. sugar

1/2 cup butter

2/3 cup buttermilk 2/3 cup water + 2 Tbsp. dry milk powder + 2 tsp. vinegar

Directions

1In the bowl of a stand mixer, combine dry ingredients together.

2Cut butter into small dices and add to dry ingredients.

3Using the beater attachment, cut butter into dry ingredients.

4Add buttermilk and using the dough hook, knead biscuit dough until it barely comes together.

5Turn out onto a floured surface and knead until a soft dough is formed, adding additional flour as needed.

6Roll or pat dough out to desired thickness (thicker dough produces higher biscuits) and cut with biscuit cutter.

7Compile leftover dough and pat or roll out again and cut until all the dough has been cut into biscuits.

8Bake at 375 degrees for 12-15 minutes (depending on thickness) or until tops are golden brown.

MAKE YOUR OWN BUTTERMILK FROM POWDERED MILK:

Combine 1 cup water, 3 Tbsp. dry milk powder and 1 Tbsp. vinegar and allow to sit for 5 minutes. Or for those really wanting easy, simply add the dry milk powder to the dry ingredients and the water plus vinegar at the end for the liquid instead of the buttermilk.  SO EASY!
