My kids love to make cookies with my husband every Sunday (he is an AWESOME cookie maker). It’s one of my favorite rituals but one that usually has to take a hiatus in the Summer. So I knew that cookies in the Sun Oven was something that we HAD to figure out. The first problem was that you can’t bake a ton of cookies in the Sun Oven…and we are used to baking a lot of cookies. But I realized that it would be SUPER easy to just make Cookie Bars in the Sun Oven (we used my Grandma’s chocolate chip recipe).
We just put in enough dough and smashed it together to fill the pan and then baked. In the Sun Oven, they took about 30-40 minutes to bake. The tricks for knowing when it is done is that 1) the lid will get steamy, 2) it will be a delicious brown color and 3) you’ll see the sides of the bars pulling away from the pan. Oh man! They are so good! So moist and chewy with just the right amount of browning on top. So instead of cookies and milk, we are having cookie bars and ice cream. Who can complain?
