  1. I loved the video. I just had a few questions. I live in Kansas and am 2 1/2 hours away from a cannery, so we don’t get there much, but I was wondering about your powdered eggs. Where do you get those? I don’t think they have them at the cannery. Also, how do you use beans in your food storage. I noticed one of your cookie recipes called for cooked white beans. How do you cook those? Do you ever grind the beans and use bean flour? Thanks!

  7. I would also love to get more tips on using dried beans. After reading your blog and others for the past couple months I feel that is the only missing piece in my use of long-term food storage. Just a thought for future posts…

    You know it!! Of course I use powdered milk on cereal. That is one of the easiest places to disguise it because you have other flavors. We actually only drink powdered milk and we love it! In fact I had the achievement girls over today to make cookies with food storage and I offered them some milk and they ALL drank it and asked for seconds and thirds and they kept telling me how good the milk was!

    I get my powdered eggs at a grocery store here in Utah but there are some online vendors you can check. http://www.bluechipgroup.net http://www.emergencyessentials.com and http://www.honeyvillgrain.com To cook beans: Quick Soaking – For each pound of beans, add 10 cups hot water; heat to boiling and let boil 2 to 3 minutes. Remove from heat, cover and set aside for at least 1 hour.
    Overnight Soak – For each pound (2 cups) dry-packaged beans, add 10 cups cold water
    and let soak overnight, or at least 8 hours.

    Cooking Beans

    Once your beans have soaked and tripled in size, itโ€™s time to cook them. The most important step in this process is to drain off the soaking water and rinse the beans before cooking to help decrease the gas side effect. Depending on the bean variety, it will take 30 minutes to 2 hours to cook. Make sure and check the package for more specific directions. Youโ€™ll know the beans are done when they are tender, but not overcooked. If your beans have been sitting in your food storage for a long time you will need to cook them for a longer period of time. Cool the beans in their cooking liquid if you are not adding them to another liquid, like a soup, when they are done cooking.

    I have heard of grinding them into flour but I’ve heard conflicting reports about whether it should be done. You can use beans for shortening in any recipe. Simply replace the shortening with mashed beans.

  17. Crystal I love you for that shortening/bean tip. I don’t use shortening in very many recipes so it always goes rancid and I have to throw it away. Now I know a healthy, non-perishable alternative. Thank you! And thanks for posting our video … it was so fun to meet with you ๐Ÿ™‚
