Non-Fat Oatmeal Raisin Cookies

These cookies were my dad’s favorite when I was growing up.  Now that he has some health issues, I healthified (is that a word? ha ha) this recipe so he can still enjoy them. But the truth is, I like them even better this way!

  • Yields: 2 dozen cookies

Ingredients

1 cup cooked, drained white beans (or 1 cup butter)

3/4 cup brown sugar (3/4 cup sugar + 1 Tbsp. molasses)

3/4 cup white sugar

2 eggs (2 Tbsp. egg powder + 1/4 cup water)

1 tsp. vanilla

1 ½ cup whole wheat flour (all-purpose works as well)

1 tsp. salt

1 tsp. soda

3 cups oats

2 tsp. cinnamon

2 cups raisins

Directions

1Cream together beans, sugars, eggs and vanilla.

2Combine dry ingredients and mix into wet ingredients.

3Stir in raisins.

4Drop by rounded tablespoonfuls and bake for 8-10 minutes at 350 degrees.

a tip before you begin…I always soak my raisins in water & vanilla so that the raisins are plump and juicy and taste like vanilla. If you don’t have a lot of time you can heat the water, vanilla, and raisins in the microwave for 2 minutes. Remember that you can definitely use your leftover water to hydrate your food storage powdered eggs!

Another pro cookie tip is to chill your dough before baking.  Go ahead and shape your dough and place on a cookie sheet to chill.  Doing it this way, cuts down on chill time and is simplifies the entire process.

You can also freeze this cookie dough.  Simply shape and place on a greased cookie sheet. Freeze for 8 hours, or over night.  Once the dough is frozen, remove from cookie sheet and place in a freezer safe bag.
