So while we’re talking zucchini, we might as well talk about Zucchini Bread.  In my opinion, zucchini bread is the BEST thing to make with zucchini.  It’s so delicious!  So why not make some and bake it in the Sun Oven?  I had to double the recipe because of the size of my zucchini so I decided to try baking it in a Bundt pan.  I love making bread in a Bundt pan because 1) it looks better, 2) it makes it easy to cut, and 3) it takes the same amount of time to bake as a regular loaf pan.

I used this zucchini bread recipe but baked it in my Sun Oven….and oh my!  I am never going back!  The Sun Oven made it so moist with hardly any crust!  It was literally melt in your mouth goodness.  Now I wish I had more because it was gone within 2 days.  The best way to know your bread is done in the Sun Oven is 1) your glass lid will get steamy and 2) the edges will pull away from the pan.  Obviously, you can still do the toothpick test and you should, but you don’t want to open your Sun Oven frequently because your heat will escape.  You could hardly even taste the whole wheat, I’m guessing because it was so moist.  Hands down, I’ll be baking bread in the Sun Oven all of the time now!
