raspberry

My whole life I’ve wanted to make a yummy, fresh tasting Raspberry Vinaigrette.  They are so delicious in the summer when raspberries are at the peak.  Well now, with a little food storage magic, you can have it year round!  All you need are some freeze-dried raspberries and you have the beginnings of a wonderful salad!  My favorite is with canned peaches (okay, so maybe I have a small addiction problem to canned peaches…), spinach, feta cheese, red onion, and some candied nuts.  You just can’t go wrong with such a simple, fresh tasting salad!  It makes a great side dish to grilled meats or a nice roast with apple butter or some yummy breadsticks!

Okay, here is also where we need to talk appropriate bottles for doing vinaigrettes.  The bottle you choose definitely needs to not leak because you will be shaking the bejeebers out of that bottle to work the oil, vinegar, and spices together.  I use mason jars and am saving my pennies for this beauty!  It helps keep you from dumping the entire jar of dressing on your salad (not going to lie, it’s happened a few times to me…whoops!) and makes it really easy to shake and store.  Let me introduce you to the OXO Salad Dressing Shaker.  It’s awesome and can be purchased from Amazon for only $14.95
