So I found this new recipe that I wanted to try. Well actually, my son did. He loves to cook and loves looking at recipes. Obviously, he loves the recipes that are dessert related…but then again, we all do! He has really loved helping me with the Sun Oven. He helps me align it with the sun, pull it out and put it back away. Part of what has been so fun is just watching him get so excited to help! So of course, I had to make these.
This recipe normally makes 20 normal sized cupcakes. But guess what, my muffin pans didn’t fit in Sun Oven….WHOOPS! It’s always a good idea to check the pans BEFORE starting the recipe. Thankfully, my large muffin pans fit just great and they actually worked out so much better! It made them like little cakes. I’m definitely learning that you need to go with the flow when you’re solar cooking and be brave to try new things! These took longer to cook but it was obvious to tell when they were done because you watch for the peanut butter centers to be set and the glass lid to be steamy. It was a great new recipe and the Sun Oven cooked them perfectly…I mean PERFECTLY.
